The following ingredients will make enough Tomato Sauce for approximately 10 people. 

The meat you add to the sauce will give it an unforgetable flavor.

I always prepare the meat before I start cooking the sauce.

For this section you will need the following: Before adding any ingredients to the meat Mash together: Mix the following ingredients into the meat: (recommend splitting these ingredients in half and preparing the meatballs in two batches, as they are easier to handle).

USE YOUR HANDS. DON'T BE SHY.

You should have approx. 13 - 14 meatballs.

Tomato Sauce

Use at least a 8 quart pot - a bigger size would be better if you have one!

Mixing The Sauce

Before adding the spices.

Cook the sauce at medium heat until mixture is hot (stir frequently) and the tomato paste has blended into the sauce.


  • Add the following spices, rubbing them in your palm to release their fragrance:
    • 2 tbsp - oregano
    • 2 tbsp - rosemary
    • 2 tbsp - basil
    • 2 bay leaves
    • 1/8 teasp (+) red pepper flakes

Cooking Instructions

  • Add meatballs to tomato sauce.
  • Reduce heat to low and stir occasionally.  Allow to cook for at least 3 to 4 hours - with all the meat in it.
  • Do not remove from the heat until the air bubbles leave a "moon crater" on the top of the sauce.

Be sure and check the pork chops!

If they begin to break apart - remove them from the sauce.   Put the pork chops back in the sauce to warm them up before serving your dinner.

Any leftover sauce and meatballs can be frozen for 5 - 6 months. I usually freeze small amounts of sauce and 3 - 4 meatballs in it for meals for my family
